Ready, set, create!

Lately I've had a major creative itch. I desperately want to sew & make pretty things & I just can't find the time (& when I have a bit of time I can't seem to find the energy!).

It's not that I haven't done anything creative lately, but it hasn't gone into the realm of crafting, which is really what I want to do right now.

Today's creative undertaking was a four-layer chocolate cake. Ray was so impressed with a huge cake he saw at a restaurant over the weekend so I thought I'd surprise him with one today. I discovered: I need more cake pans! I only have two round cake pans. When each cake needs to bake for 40 minutes & then cool in the pan for another 10 & then the pan needs to be re-greased....you're looking at an hour just to bake each cake. With five layers & only two pans...well, I was in the kitchen ALL afternoon. In fact, it was supposed to be a five-layer cake but the fifth layer didn't finish baking in time.

The four layers were fine, though, the cake was divine! Ray seemed quite pleased with it, too.

For some reason the first two cakes I made stuck horribly to the cake pans & crumbled a bit. The next three I made sure to not only grease & flour but, also to put a layer of wax paper on the bottom of the pan (it kind of grosses me out but it really helps!).

I was in the middle of frosting the cake when Ray called needing to be picked up from work. The very hurried & messy end result:



(It doesn't matter how it looks, it was SO good!)


My favorite part is the raspberry filling (I use all fruit) between the layers. The cake recipe is off of the Hershey's cocoa powder box. The icing recipe is on the box, too. The only thing I did different was use melted butter in the cake instead of vegetable oil, only because I didn't have enough oil.

Now, I must pawn the rest of the cake off on somebody because I know I'm not strong enough to resist the temptation of eating it all!

this recipe freezes well. then i could have some next time i visit
