I can't believe Thanksgiving is tomorrow! We'll be heading back to Orlando in the morning & we're probably staying until Saturday, for Andrew's wedding.
Because we're always traveling somewhere for the holidays I never have to prepare any food, which is actually slightly disappointing. I still make stuff for us but it's not the same.
I remember one time when I was very young, maybe first grade, & we had an orange cranberry bread in class around this time of year. I LOVED it & still think about it to this day. I found this recipe for Cranberry Orange Bread online & baked it this afternoon. It's okay but I've heard it's better once cooled.
I also made a tuna ball today. I hate foods with the word "ball" in it, it just sounds weird to me but that's what I grew up with this being called. While not a holiday dish I remember my mom making it around Christmas time so I tend to eat it more this time of year. I love it, but I also like tuna. It has been received with excellent reviews; my mother-in-laws husband, Mike, has even taken to making it now! It's also quite easy, it doesn't even qualify so much for cooking as it does mixing together a few ingredients.
Tuna Ball Recipe:
2 6oz. cans of tuna (preferrably White Albacore Tuna in water, cans drained)
8 oz. cream cheese (again, best if its not reduced fat or fat free)
2 T Heinz Chili Sauce
2 T dried parsley flaked
1 t dried minced onion
1/2 t tobasco sauce (optional)
Mix all ingredients together. Chop some walnuts & place them on wax paper. Place the tuna mixture on top of walnuts & mold into a ball shape while covering the tuna in the chopped walnuts. Refrigerate.
Now you have a super easy, fast, & yummy appetizer! Or, in my case, LUNCH. My favorite is to eat it with Ritz crackers.
