What to do with the free mushrooms I got from the grocery store grand opening when faced with a husband not real fond of very obvious mushroomy dishes? I also happened to have a package of egg roll wrappers in the fridge that I bought on a whim the other day so I decided to throw together a recipe for fried wontons - yum!
Let's see if I remember how I made these...I really need to start writing things down.
Olive oil
2 cloves garlic
1/2 onion
8 oz white mushrooms
5 oz. cream cheese, softened
1 oz fresh parmesean
1/4-1/2 t dried ground thyme
1 egg, beaten
wonton wrappers
vegetable oil
Finely mince the garlic & chop the onions. Heat a couple tablespoon of olive oil in the skillet & add the onions and garlic. Saute for several minutes. Finely chop the mushrooms & add to onion/garlic mixture & cook until soft. Remove from heat.
In separate bowl beat the cream cheese & then add the parmesean cheese and thyme and mix. Add the mushroom misture and combine.
Heat about 1.5-2 inches of vegetable oil in the skillet.
Lay out the wonton wrapper and coat two edges with the egg. Add a bit of the mushroom mixture and seal wonton shut. Fold into whatever shape you find to your liking (I experimented with several, but folding it in quarters seemed to work best for me)
For the record, even if you have someone who doesn't like mushrooms, get them to try this anyway. I fed it to Ray & just told him it was an "onion filling" (so he wouldn't be biased before trying it!) & he liked them - even after finding out there were mushrooms in there, too! Also enjoyed by the two-year-old.
Then again, how can you not like something when it's fried???
